Hot Chocolate Cookie Recipe 

Like hot cocoa, these soft, chewy, and gooey Hot Chocolate Cookies are comforting. These cookies are made quickly with a hot cocoa mix and a fluffy marshmallow. No chilling is required! They are great for holidays or comfortable moods.

– 1½ cups all-purpose flour (180g) – ▢½ cup hot cocoa mix (3 to 4 packets) – ▢¼ teaspoon salt – ▢¾ teaspoon baking powder – ▢½ teaspoon baking soda – ▢½ cup unsalted butter softened – ▢½ cup light brown sugar (110g) – ▢½ cup granulated sugar (100g) – ▢1 large egg – ▢2 teaspoons vanilla extract – ▢⅔ cup semi-sweet chocolate chip – ▢12 large marshmallows cut in half or 36 mini marshmallow

Heat the oven to 375F. Prepare two baking sheets with parchment. Mix flour, cocoa mix, salt, baking powder, and baking soda in a medium bowl.

Beat the butter and sugars on medium speed for 3 minutes in a large bowl or stand mixer with the paddle attachment until light and fluffy. Mix the egg and vanilla until well incorporated, scraping the bowl. Stir in the flour mixture on low speed until incorporated. Stir in chocolate chips.

Use a 1 1/2 tablespoon spring-loaded scoop to scoop dough into balls and lay 2 inches apart on baking pans.

Bake sheets individually for 9 minutes. After baking, lay a marshmallow half, cut side down, or three small marshmallows in the center of each cookie. Return to oven and bake for 2 minutes. After a few minutes on the baking sheet, transfer to a wire rack to finish cooling.
